I’ve wanted to try this Chicken & Kielbasa Gumbo recipe from Woman’s Day Magazine for a while now. Last night we semi-celebrated Mardi Gras (while watching the Olympics and the snow falling outside our windows) and I threw this together. We gave it a 3 Star – I’m sure there are better gumbo recipes out there, but the flavor is better than normal and it is simple and quick to make – a great option for a night when you are in a rush.

While in Dubai I learned from my sister-in-law a great way to make chicken last for many dishes. Put a couple pounds of chicken in the crock pot with a stick of butter for 4 hours. Then shred the chicken (usually yields about 4-6 cups). Use it for enchiladas, soups, etc… and then save the rest in the freezer for later. I do this about once a month now. I used the left over chicken for my Gumbo and to quickly throw together a Chinese Chicken Salad to celebrate Chinese New Year.

I’m trying to give up Soda for Lent. This is going to be quite a difficult task for me. I don’t think I’ve gone more than a week since I was a teenager without Soda, and I love my Dr. Pepper. Wish me luck.
