90 Recipes and Counting

Over the past four months I’ve made 90 recipes; 13 of those were not keepers and 12 have been 5 Star. I thought I’d share a few other easy recipes that I’ve made which have been quite yummy. I forget to take pictures when it is not an actual TEST NEST dinner, but these were worthy recipes.

Zesty Shrimp Pasta Salad (3.5 Star)

Easy recipe and makes a ton so if you’re looking for a good party food, this is a great option, especially since it is served room temperature or cold. I didn’t have a jalapeno so I added a little bit of red pepper flakes to the pesto, but I think the jalapeno would add the needed kick. It could also go a little heavier on the garlic. Definitely add salt and pepper to taste.

Double-Plum Almond Tart (4 Star)

Not only does it look pretty, but it tastes divine. It has a perfect blend of bitter and sweet. The tart shell dough is definitely a 5 Star.

Chicken with Olives, Raisins, and Spinach rice (3 Star)

This dish was easy to make and I had most of the ingredients left over from TEST NEST dinners so it was a great way to use them. It looks pretty too. I served it with an Orange Chiffon Cake for dessert, which was a perfect compliment (can’t find the recipe I used, but any orange cake would be yummy). I made these two dishes for a friend’s birthday and he loved it. I thought it was a unique b-day dinner menu.

Shrimp Gazpacho (4 Star)

This Gazpacho has just the right kick. I used cooked shrimp and heated just slightly with the salt and pepper to give flavor and not dry it out. I also used fresh red and yellow peppers and roasted them myself as I couldn’t find jarred peppers. I tried to leave some chunks in my puree. I would suggest combining and leave over night so the flavors absorb into the shrimp. Then it is divine.

    that tart looks interesting. Mike loves plums I should try this one. THanks for sharing Ains
