Superbowl XLV – Yeah Packers!

We had a fabulous contributed spread of yummy food for Sunday’s Superbowl party. With all of the hype, a good game and a bingo card to fill out, I totally forgot to take pictures of the food.

So I’m providing a couple of the best recipes and also the bingo card, which Mbe put together and was a lot of fun (I don’t think I’ve ever paid more attention to a football game). Try the recipes out for an upcoming Oscar or Tony’s party. Have prizes or have everyone make predictions and put $ into a pot and create a game to encourage engagement in the game or awards.

The complete spread included Buffalo wings from Costco, chips and salsa, a selection of veggies to go with the cucumber dip and pesto dip, homemade herbed cheese pizza, meatballs, pecan cheese ball, rosemary bread from Amy Ruth’s, crackers, candy, brownies, chocolate chip cookies, and Suzi made an amazing chocolate trifle. The selection of drinks was also superb.

Cucumber Vegetable Dip (3 Stars)

A lot of the guests asked about this dip and liked the idea. A base of cottage cheese rather than sour and cream cheese made it a nice lighter option, but it needed a bit more flavor.  It was good with the veggies.

Seed and dice 1 large cucumber to 1 small container of cottage cheese. Dice half of an onion and flavor with dill. I used dried dill so fresh dill might be stronger. I’d also add fresh ground salt and pepper and I think that a bit of crushed garlic would also add more of a kick. Additional ideas for more flavor: feta, mint, rosemary.

Herbed Cheese Pizza (4 Stars)

I didn’t make a homemade crust with the lack of time, so I used Pillsbury pizza crust, which I’ve used before and is a good option for saving time. Mbe said the pizza was a pleasant surprise! Fresh out of the oven and warm it was really yummy. I made it rectangular since we didn’t have a round pizza pan, so while the middle slices were still good, the outside crispy slices were much better. The sauce is packed full of flavor.

Saucy Cocktail Meatballs (4 Stars)

This recipe is a good amount of sweet and spice and enhanced the flavor of the meatballs. They were definitely a hit and a few even considered it a 5 star.

Combine 2/3 cup grape jelly, 1 (12-ounce) bottle chili sauce, 2 T. French Dressing, 1 T. brown sugar. Stir frequently for 2 minutes then add 24 ounces of frozen fully cooked Italian meatballs. Cover and cook on low, stirring occasionally, for 15 minutes. Serve hot.
