A Test Nest in Alaska must include Salmon, while locals eat a lot of it, I don’t eat Salmon unless I’m in Alaska. From the short time I lived there however, and caught a few of these beauties myself, I experienced the taste difference between the varieties of Salmon. I knew my brother would have plenty of the best Salmon in their freezer so I was pretty excited to try this recipe.

Ask my mom and best friends and they’ll tell you my least favorite holiday is Valentine’s Day. Last year however, I caught a little bit of the love spirit with my two hearts and chocolate dinners. They were fun and I enjoyed thinking of creative ways to incorporate hearts. So I decided that with V-day on a Monday it would be a perfect opportunity for a fun celebration of good food, friends and love – it was a fabulous evening.

The complete spread included Buffalo wings from Costco, chips and salsa, a selection of veggies to go with the cucumber dip and pesto dip, homemade herbed cheese pizza, meatballs, pecan cheese ball, rosemary bread from Amy Ruth’s, crackers, candy, brownies, chocolate chip cookies, and Suzi made an amazing chocolate trifle.

I’ve had several vegetarian friends request that I do a vegetarian night. With all of the heavy foods around the holidays, and the fact that I think I ate meat everyday for 2 weeks strait, I was feeling the need to lighten it up a bit. I learned a lot about the balance of food, proteins, flavors and textures from my expert vegetarian diners, and I really enjoyed the challenge.

I had 14 amazing testers last year that attended more than 3 dinners, plus an amazing roommate who supported my experiment by allowing me to take over the apartment, fridge and much more. To show my thanks, I wanted to throw a little VIP party for my no. 1 supporters. I love making hors d-oeuvres, but rarely have the opportunity, so I decided to make the VIP night all about little bites, socializing and games.

I didn’t realize until I started making dinner that almost every dish had a little bit of sugar in it, oops, I rarely cook that way. It was all very yummy though so I guess the sugar overload was worth it. All of these recipes came from a community cookbook that we put together at the center I worked at during college.

This was my first time to make marmalade or a jam of any kind and also my first time to can anything. I was so nervous that the jars didn’t take and the lids wouldn’t pop, but seems as though it did. I’ve had phone calls from everyone that I gave the marmalade to that it was really yummy.

The whip cream was perfectly yummy, the nutmeg really made the whip cream stand out. The gingerbread cake was also yummy with fresh grated ginger in it. This is a great dessert for the season...
